I got fed up being kept out of the kitchen so had a rummage round to see what I could knock up quickly and more or less within the diet rules.
Sliced some chicken, made a simple marinade from cumin and olive oil, tossed it about a bit… and left it in the fridge for an hour or so.
Cooked/blanched some broad beans and two bunches of asparagus (sliced into 2 – 3 inch lengths). Peeled the broad beans, threw them in a bowl with the asparagus, 200 grams of halved cherry tomatoes, a handful of Parmesan, couple of teaspoons extra virgin olive oil *and* a ¼ cup of fresh basil.
Dusted with coarse ground black pepper and salt and stuck it in the fridge after ‘testing’. Tastes pretty good so far!! 🙂
Ok the Parmesan and olive oil might be a bit on the edge but what the hell – it’s only once!
Chicken is cooking slowly in a covered dish in the oven at 180ºC… will leave it 40 mins and serve. Will serve it on a bed of mixed salad leaves when the wife comes home… and no doubt wolf it down!!

The salad was very nice actually… but overall the meal would have been better had I remembered to knock up some salsa verde (or similar) to go along with the chicken. Damn… even a standard pesto would have done!! Still… it wasn’t too bad really 🙂
