Just a short update this time because the daughter found a small recipe idea on TikTok and knocked it up for lunch. Pretty much it was a burger (made from minced meat and seasonings) flattened into a ’round’ about ¼” thick, fried and placed on a multigrain (lower calorie, high fibre) tortilla that had also been fried. A square of processed cheese was placed on top along with some salad (lettuce and tomato) and the tortilla folded. She served it up with a little more salad. The entire process took around 15 mins end to end and was *really* delicious, especially for someone who is otherwise living on diet soups etc. The total (estimated) calorie content was 300. not much more than the soups but containing a lot more nutrition! 🙂
