Beetroot cooked.

Got the beetroot boiled. It’s sitting in the pot cooling while I try to decide what sort of pickle to use. I might just use up the remains of the onion vinegar… my basic mix for pickled beetroot is just vinegar, sugar chillies, peppercorns… and some star anise… so the onion mix might be a nice change.

Or maybe see how much the onion vinegar covers and maybe make up both… it’s not exactly hard either way πŸ™‚

Odd writing about this. It used to do it all the time… likewise I used to claim I made my own curry mixes… and did roasting and grinding when I needed them. But I realised it’s *years* since I did anything like that. It’s too damn easy to slip into bad habits when nobody enjoys eating your food πŸ™‚
